High Protein Frittata recipe - good food


High Protein Frittata

This is an easy breakfast dish that is loaded with protein. You can customize it to
your liking, so use whatever veggies you like or have in your fridge. This is a great
way to use up leftovers.
Ingredients:
8 large, cage free, organic eggs
4 strips of bacon, cooked and crumbled
1/2 small onion, chopped
1/2 cup sliced mushrooms
2 cups baby spinach leaves
1 tablespoon butter
Freshly ground black pepper, to taste
Directions:
Preheat oven to 350 degrees. Heat a large ovenproof skillet over medium heat
and add the butter and vegetables. Sauté until tender, remove from skillet and set
aside.
Beat eggs in a large bowl and add the cooked vegetables. Season with freshly
ground black pepper to taste. Pour mixture into the skillet and put in the oven.
Bake for 12-15 minutes until eggs are firm to the touch.
Top with crumbled bacon and serve immediately.
